Offal curry chili


This chili is so spicy and warm and flavorful due to all the complex fatty acids present in the various meats.


  1. Heat your bacon phat over low-medium heat

  2. Add your onions and cook until translucent, about 10 minutes

  3. Add your garlic and ginger

  4. Add the meat and cook until done, breaking up the meat into small pieces with your wooden spoon

  5. Add the curry powder, cayenne, paprika and some salt

  6. Add the curry paste and tomato paste

  7. Check the taste, and adjust spices/salt as necessary

  8. Turn the burner off, and add the milk/yogurt. Stir well


  • 1 lb ground and mixed offal

  • 1 tbsp bacon PHAT

  • 1 tsp curry

  • 1 tsp ginger

  • 1 tbsp paprika

  • 1 tbsp cayenne

  • 1 tbsp tomato paste

  • 1 tbsp curry paste

  • 2 tbsp raw milk or yogurt

  • 1 medium onion, chopped

  • 2 garlic gloves, minced

  • Himalayan or pink salt to taste
